So you need a last-minute cocktail for St Patrick's Day...

St Patrick's Day is coming up and that means you need to have a drink prepared to celebrate the day. That's just how we honour the man who founded Christianity in Ireland, and to spend the evening sober is to insult an entire nation. Honestly, we don't have this pressure when it comes to St Andrew.

If, like me, you don't keep track of the days dedicated to each of the patron saints, then St Patrick's Day has probably arrived out of nowhere and you no longer have time to purchase a special bottle of premium poitin and infuse it with shamrocks or something. So you need to make a relatively quick and simple cocktail that still feels in keeping with the Emerald Isle.

In this instance, there's only one real rule to follow: don't just drink something green. Don't make a drink with green chartreuse or green matcha or green food colouring... that's how you honour a colour, not how you honour a country's heavenly protector.

No, the best thing to do is use an Irish whiskey and THEN work out how to make it green. Here's how I did that.

Irish Whiskey Smash



2oz Jameson Irish Whiskey
10 Mint Leaves
1/2 Lime, cut into quarters
1/2oz Sugar Syrup

Method: Muddle the mint with the limes and syrup. Then add the whiskey and ice and shake. Fine-strain over crushed ice and garnish with a sprig of more mint.
If there's one lesson to be learned here, it's that planning ahead really helps, which is why I'm going to be fully prepared for the next official calendar date. (*checks diary*) What's an 'equinox'?
